Apple Butter
Ingrediants
  1. 8 cups tart apple sauce
  2. juice of one lemon
  3. 6 cups sugar
  4. 2 tbls cinnamon
  5. 1 tsp clove
Directions

Combine all ingrediants in a baking pan, uncovered & bake at 300 degrees for 3-31/2 hours, stirring occasionaly,should be thick. pour boilng hot into sterilized jars and seal at once.yields 4 quarts.

Apple Strussel Pie
Ingrediants for Crust
  1. 1 1/2 cups allpurpose flour
  2. 1/2 cup + 1Tbs Crisco
  3. 3Tbs ice cold water
Ingrediants for Filling
  1. 6 cups tart apples cored peeled and sliced
  2. 3 Tbs flour
  3. 3 Tbs lemmon juice
  4. 1/2 cup sugar
  5. 1/2 cup brown sugar
  6. 1 tsp cinnamon
Ingrediants for Topping
  1. 10 Tbs flour
  2. 1/2 cup butter
  3. 1/3 cup sugar
  4. 1/4cup brown sugar
  5. 1/4tsp nutmeg
  6. 1 tsp cinnamon
  7. dash salt
Directions

Preheat oven 350 degrees Place alluminum foil under rack to catch drippings.For Crust, Cut shortning into flour till crumble stage add very cold water. Mix with fork just enough to form ball. Refriderate for 1/2 hour.
Filling, Mix all ingrediants in bowl add to crust. Bake pie at 350 degrees for 35 min. before putting on strusell mix.
Stusell, Mix all ingrediants except butter,cut butter in to dry mixture untill crumble stage. Put onto pie after first 35 minutes cook 30 minutes longer.

Aunt Rose's Sugar Cookies
Ingrediants
  1. 1 cup butter or margerine
  2. 1 1/2 cups sugar
  3. 3 eggs
  4. 1tsp.vannila
  5. 3 1/2 cups flour
  6. 2 tsp cream of tarter
  7. 1 tsp baking soda
Directions

Cream butter then add sugar, mix with beater until fluffy, add eggs one at a time beating continuisly, then add vannila. mix in dry ingrediants a little at a time utill completely mixed. split dough in two halves and wrap in waxed paper and refridgerate overnight or at least three hours. flour surface to roll dough out on roll to 1/4 inch thickness bake at 350 degrees for 8 - 10 minutes.

Banana /Zuccinni Bread/Muffins
Wet Ingrediants
  1. 3eggs
  2. 1cup of oil
  3. 2 cups sugar
  4. 2 cups peeled grated zuccinni/or mashed banana
  5. 2 tsp vannila
Dry Ingrediants
  1. 3 cups flour
  2. 1 tsp salt
  3. 1 tsp baking soda
  4. 1/4 tsp baking powder
  5. 3 tsp cinnamon {zuccinni bread only}
  6. 1/2 cup rasins and or nuts {optional}
Directions

Mix wet ingrediants well. In a seperate bowl combine dry ingrediants all but rasins and nuts. Mix wet and dry ingrediants well, add rasins and or nuts, put in two buttered bread pans. bake at 325 for 1 hour /makes 3 doz. muffins bake for 25 minutes.

Butter Cream Icing
Ingrediants
  1. 1 cup milk
  2. 1cup sugar
  3. 1/2 cup butter
  4. 1/2 cup shortening
  5. 1 tsp vannila
  6. 4 tbls flour
Directions

mix flour and milk in a saucepan slowly bring to a boil stirring constantly when it starts to thicken remove from heat and let cool completely.in a seprate bowl mix remianing ingrediants utill fluffy add cooled milk and flour mixture and blend untill peaks form. enough to do a 9 inch round two layer cake.

Carmel Peanut Crunch
Ingrediants
  1. 24 graham cracker squares
  2. 3/4 cups butter
  3. 3/4 cups firmly packed brown sugar
  4. 1 cup semi-sweet chocolate chips
  5. 1 cup salted peanuts
Directions

Place graham crackers side by side on bottom of ungreased 15 x 10 x 1 inch jelly roll pan. In heavy 2 quart sauce pan combine butter and brown sugar cook over medium heat stirring ocasionaly until it comes to a boil. Boil stirring constantly for 5 minutes pour over graham crackers immediately and spread to coat. sprinkle with chocolate chips let stand for one minute and spread , sprinkle with nuts and lightly press into chocolate. let cool break into pieces. Makes four dozen.

Carmels
Ingrediants
  1. 1 cup butter
  2. 1 pkg 16 oz. brown sugar/ 2 1/4 cups
  3. 1 14 oz. sweetened condensed milk/ or 14 oz. whipped cream
  4. 1 cup light corn syrup
  5. 3 tbls instant coffee
  6. 1/2 tsp grated orange peel
  7. 1 tsp vanilla
  8. 1 cup chopped pecans{optional}
Directions

Line a 9x13 baking pan with foil and butter foil. In heavy sauce pan melt butter over low heat. Stir in sugar, condensed milk, corn syrup coffee and orange peel. Cook over medium heat stirring frequently with wooden spoon bring, using candy thermometer bring temp. to 240 degrees Mixture should boil steady over entire surface. approx.15 to 20 minutes should read firm stage on candy thermometer. Add vanilla imedeately, and nuts if desired. Pour into pan and cool.When carmel feels firm remove from pan and with buttered knife cut into 1x1/2 inch pieces.wrap with foil or plastic wrap. yields approx. 180 pieces.

Da-Oh{Gibba spice mixture}
Ingrediants
  1. 3/4 # Fresh Basil
  2. 1/4 # Fresh Mint
  3. 1/2 small hot pepper {jalepeno}
  4. 1 med green pepper
  5. 1 tsp allspice
  6. 1 tsp nutmeg
  7. 1 tsp cummin
  8. 2 tsp black pepper
  9. 1/2 tsp cinnamin
  10. 2 whole bay leaves
  11. Enough salt as to keep from freezing {aprox.1/4 cup}
Directions

In a food processer with cutting blades mix all ingrediants and processs until a paste like form. store in glass mason jar in freezer until time of use.

Goosa {stuffed zuccinni}
Ingrediants
  1. 6 medium zuccinni{cut in half and cored}
  2. 1/2 pound ground meat
  3. 3/4 cup of long grian white rice
  4. 1 small can tomato paste
  5. 1/4 cup fresh parsley
  6. 1/4 cup fresh scalions
  7. 1/2 stick butter
  8. 1 1/2 water
  9. salt and pepper
Directions

In a large bowl mix meat,rice,parsley scalions and 1/2 can of tomato paste salt and pepper. Stuff mixture into cored zuccinni and place in heavy bottom 8 quart pot. In 4 quart pot mix water butter and other 1/2 can tomato paste bring to boil making sure all is mixed well. pour sauce over stuffed zuccinni add water to cover bring back to boil, then simmer covered for 45 min.

Osso Bucco
Ingrediants
  1. 3 pounds veal shank
  2. flour for dredging
  3. 2 tbls olive oil
  4. 1 large onion
  5. 1 clove garlic
  6. 2 red or yellow peppers seeded
  7. 1/2 cup chicken broth
  8. 1 large can peeled tomatoes or 4 large fresh
  9. 2 tsp lemmon juice
  10. bouquet of fresh rosemary,sage,and oregano,or pinch of each if dried
  11. salt and pepper
Directions

Dredge shank pieces in flour, brown pieces in oil in dutch oven or heavy metal pan . Add remaining ingredients and bake covered at 350 degrees for 2 hours.

Peanut Butter Cookies
Ingrediants
  1. 1/2 cup peanut butter
  2. 1/2 cup butter
  3. 1/2 cup sugar
  4. 1/2 cup brown sugar
  5. 1 egg
  6. 1/2 tsp. vanilla
  7. 1/4 tsp salt
  8. 3/4 tsp baking soda
  9. 1 1/4 cups flour
Directions

Mix all ingredients well. Spoon onto cookie sheet slightly press fork criss cross pattern and bake at 350 degrees for 10 to 12 minutes.

Pickled Peppers
Ingrediants
  1. Hot Bannana Peppers
  2. 1 1/4 cups white vinegar
  3. 1/3 cup salt
  4. 1 teas oregano
  5. 1 cup water
  6. 2 cloves garlic
  7. 1/4 cup oil
  8. 1/2 cup brown sugar
Directions

Cut peppers into strips or rings place in crock. In a saucepan warm all ingrediants except peppers and brown sugar until salt is dissolved. Add brown sugar and pour brine over peppers in crock and let stand for three days stirring daily. Put into jars cover with brine and refridgerate

Sour Kraut Balls
Ingrediants
  1. 1# ground pork
  2. 1# sour kruat (chopped fine)
  3. 1 med onion
  4. 2 eggs
  5. 1/4 to 1/2 cups bread crumbs
  6. salt & pepper to taste (easy on the salt)
  7. flour for dredging
  8. oil for deep frying
Directions

Drain sour kruat, (do not rinse)chop kruat finely and add to rest of ingrediants except flour and oil. add enough bread crumbs so mixture will form 1 Inch meat balls, dredge in flour and fry in oil untill brown. drain on paper towels and serve
